There are certain points throughout the year when a tide of wellness mania rushes over you. For me, this happens as the seasons change and I feel the need to reset my routine, especially after a summer of eating, drinking and daily trips to the beach. If you're like me and you find it hard to motivate yourself to eat healthy unless you're convinced it will make your skin look like Hailey Bieber's, then I have 3 recipes that are guaranteed to make you glow from the inside out! These recipes are inspired by the new Apivita Express Beauty Menus and use their star ingredients to detox, hydrate and rejuvenate your skin.
First course: Detox with Pumpkins
Can you think of anything better than a creamy pumpkin soup to kick off autumn? What if I told you that this pumpkin soup happens to be anti-inflammatory, immune boosting and detoxifying? While you're cooking this is also the perfect time to treat your skin to Apivita's Detox Diet menu, which includes their signature Pumpkin For Detox mask.
What you'll need:
2 Tbsp olive oil
An inch of fresh ginger, peeled and sliced (you can also use 1/2 tsp of ginger powder if you don't have fresh ginger)
1 white onion
2 cloves of garlic
Roughly 500g of chopped pumpkin
1/2 vegetable stock cube
1 medium-sized potato, peeled and chopped
1/4 tsp turmeric powder
1/4 tsp chilli powder
1/2 tsp thyme
Pumpkin seeds to garnish
Instructions:
This soup is, like most soups, incredibly easy to make. Simply heat the olive oil in a large pan, add in your white onion, ginger and garlic and stir until the onion becomes translucent.
Add in your chopped pumpkin and potato and fry them for a few minutes
Add enough hot water to cover the vegetables and stir in the vegetable stock cube and the rest of your spices and herbs.
Allow the mixture to cook over low heat for 20-30 minutes, then take off the heat and allow it to cool down a bit before blending it thoroughly.
Second Course: Hydrate with a Honey Orange Glaze
When you think of hydration drinking more water usually springs to mind, but when it comes to skin your omega-3 intake is what really makes a difference. Sure, drinking your 2 litres a day will help, but taking enough omega-3s will help balance your oil production, soften rough skin and keep your skin hydrated for longer. This honey-orange-glazed salmon is rich in healthy fats and it's a perfect, easy weeknight dinner! What you'll need:
1 tablespoon olive oil
4 skinless salmon fillets (170 grams each)
1/4 cup fresh orange juice (equivalent to 1/2 an orange)
2 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic, sliced
Method:
Heat the olive oil in a large skillet over medium heat.
Add in your salmon fillets and sear for about 3 minutes on each side.
Add in your orange juice and allow the quantity to reduce by half before drizzling over the honey and soy sauce and adding in your garlic. Make sure your salmon is evenly coated in the sauce.
When the salmon is cooked to your liking take your skillet off the heat and serve it with whatever side you prefer. My favourite is steamed rice and some sauteed vegetables!
Third Course: Revitalise with Grape Sorbet
Have you ever justified a cheeky glass of wine by claiming it'll make you live longer? It turns out there's some truth behind that old wives' tale. Grapes contain a phytonutrient called resveratrol, which is notorious for its anti-ageing benefits. That being said, there are healthier ways to consume these phytonutrients than by downing half a bottle of wine (although they might be less enjoyable). This grape sorbet takes 5 minutes to make and it's the perfect healthy treat for when you need something to satisfy your sweet tooth. What you'll need:
2 cups of green or red grapes
1 tbsp honey
1 tsp lemon zest
1 tsp lemon juice
Method:
Remove the grapes from the stem and lay them out flat in a container, plate or on a baking sheet. Freeze them for a minimum of 5 hours or until solid.
In a food processor blend the grapes for a while before adding in the rest of your ingredients. Puree until smooth.
Enjoy instantly or freeze in an airtight container for up to 2 months.
